St. Paul Roastery is a coffee roaster and café in Thunder Bay, Ontario, co-owned by Stefan Pakylak and Cam Reid. It is located at 11 St. Paul Street, next to New Day Records.[1][2]

History

Stefan Pakylak and Cam Reid, friends from high school, began as home roasters, using popcorn poppers and mail-order supplies and selling to friends and family, before upgrading to a commercial roaster and opening St. Paul Roastery, described at its launch as the newest entrant to Thunder Bay's coffee scene. The two roast green beans in-house, giving patrons the opportunity to observe the process.[1][2]

Operations

The roastery uses a Diedrich roaster capable of a twelve-kilogram batch and serves coffee brewed in glass Chemex and beaker-style vessels. Reid and Pakylak sample beans from a Minneapolis distributor before selecting which to roast, log roast profiles to a USB device, filter their water, and use a refractometer to measure the total dissolved solids in the finished cup. Most coffee sold is single-origin, the exception being an espresso blend of Colombian and Burundian beans. Alongside whole and ground coffee, espresso drinks and hand-brewed filter coffees, they sell speciality home-brewing equipment. Kevin Belluz is the roastery's local distributor.[1][2]

Among its staff is Will Rutledge as of 2026.
